Winemaking

We love the smell of fermentation in the morning!  We take pride in handcrafting our wines, nurturing each grape from crush to bottle with meticulous care. The parallels between winemaking and flying are truly remarkable; both crafts require meticulous attention to detail, precision, and unwavering vigilance. As flying is a graceful ballet performed in the sky, so too winemaking embodies an art form, especially when it comes to determining by taste the optimal time in French oak barrels and perfecting exquisite blends. Each step in the process is a delicate balance of science and artistry, resulting in a wine that captivates the senses.

The most fun thing you can do at a winery? A barrel tasting, where the winemaker pulls wine out of the barrel with a 'wine thief' ~ Cheers!

Laurent Vineyard

It is not uncommon for vineyards throughout the wine regions of Europe to have names that reflect the terroir ~ the climate, soil, and topography. The Irish Hills of Michigan were formed by glacial activity during the last Ice Age; that glacier was called 'Laurentide Ice Sheet'. While Lorenzo would never name something after himself, 'Lorenzo' and 'Laurent' both derive from the same Latin word, Laurel, which in Roman culture was a symbol of victory and honor. Thus, selecting a name for our vineyard came easy!

The Crew

At Chateau Aeronautique Winery, Blue Skies Brewery & Mile High Distillery, collaboration is key. Owners Lorenzo and Amanda, along with Brewers Tim and Chris, Winemaker Camden, Distiller Kevin, General Manager Krista, and Brand Ambassador Zach, work together to conduct bench trials, fine-tuning the perfect blends for our new libations. Once we reach a consensus, we meticulously document our findings before diving into the creative and enjoyable process of naming our latest creations. Sometimes, this journey requires a few rounds of brainstorming to ensure we get it just right!
